Potato Bisque

Ingredients:
1/4 cup chopped parsley
1/4 cup chopped onions
1/4 cup chopped celery

Saute' onions, and celery till almost soft. Add mushrooms if desired. Add one quart stock, 4 cups diced potatoes. Simmer till potatoes are soft. Add one quart milk, DO NOT BOIL! Mix 2 tbsp. cornstarch with water. Slowly mix into bisque and heat and stir until thickened.
